French Baking and Viennoiserie Trainings
This training course specialises in mastering the techniques of bread and pastry making; Two areas of expertise which serve to build the international reputation of French gastronomy.
The Bread and Pastry course includes:
- Bread making: gaining in depth understanding of basic know-how and techniques for making different French breads, from the famous baguette to regional breads,
- Pastry making: mastering the secrets of speciality pastry making.
A French Baking and/or Viennoiserie Diploma is given to students who have completed this training and attended the internship in the main bakery. It is awarded after a continuous evaluation.
Students who have successfully completed of both courses (French Bread Baking and Viennoiserie) and after validation by the School Director, have the possibility to have a two day internship in the main bakery of the Ritz Paris Hotel, run by Chef Christophe Bordas. This internship is not manditory, but is strongly recommended as it is an integral part of the cursus and training.
