This degree represents the most comprehensive training offered by the school, combining the eight core courses in cooking and pastries. This Masters also includes a one night stay at the Ritz Paris and two lunches at the gourmet, Michelin starred restaurant L'Espadon. The training lasts 19 weeks, for a total of 602 hours, with 5 sessions being held each year.
A Master's Diploma in French Cuisine is awarded to students who have completed all of the courses, by obtaining various module diplomas and completing the internship.
Training Objectives:
- Respect and develop products, prepare and present the dishes according to the French know-how traditional and contemporary - to master the techniques, optimal use of equipment - organize work and manage time - know the rules of hygiene rules for food, - interpret existing recipes and develop new ones.
After completing the program in its entirety, and subject to the approval of the School's Director, it is possible to access a two-month (40 day) internship in the main kitchen and / or the main bakery at the Ritz Paris. This internship is not mandatory, but is strongly recommended because it is part of the educational curriculum of the training. "
