Advanced French Pastry Training
This training is composed of seven sessions dedicated to perfecting pastry techniques and is designed for advanced students: students who have completed the Initiation to French Pastry, professionals or those of equivalent level.
This training course is intended for professional bakers as well as passionate gourmets seeking a high quality training to master the art of pastry making. Comprised of seven modules, this training course will help you master the advanced techniques.
The training includes:
- Revision of elementary principles
- Perfecting the techniques of preparations in cake making: pastry, creams and coulis,
- Presentation, decoration, and finition.
Following the completion of the seven training modules, students having successfully passed the practical examination will be awarded a diploma.
Upon successful completion of the full course and validation by the School Director, students have the possibility to take a ten day internship in the main pastry kitchen of the Ritz Paris Hotel, run by chef Sébastien Serveau. This internship is not manditoey, but is strongly recommended as it is an integral part of the cursus and formation.
