This module is part of an integral training consisting of seven modules and is dedicated to learning the fundamentals of French pastry reserved for beginners.
This module aims at learning the techniques of preparation of molecular pastry:
Steamed herb sponge cake, red fruit jelly, soy milk mousse - Banana and avocado milk-shake - Suntory whisky foam, coffee-flavoured crème brûlée - Coffee spheres, molten chocolate tart - Milk foam, coconut-flavoured spaghetti - Mandarin orange caviar, Camparis emulsion - French toast, mango spherification - Caramel custard without cooking
